No. Members see activity from their own projects, plus team-wide news like someone joining. Owners and admins see the whole workspace.
On paid plans, all the way back. Free shows the last 30 days; older activity is hidden, not deleted, and comes back when you upgrade. You can narrow it by date, type and person, or search it.
About things that involve you, yes: a task assigned to you, a comment on your task, a mention in chat. They show in the app, as push notifications and by email, and you can turn off the emails you don't want. Posts don't send notifications.
